The Fourth of July is all about Glorious Independence. Independence for the Thirteen Colonies. Independence from taxation without representation and King George III.
And, for me, independence from my oven!
If your home is anything like mine, my oven expels so much heat that it can roast up the entire house in about two seconds flat. And, in early July in Spokane, it’s just too blazing hot for that. So below is a recipe roundup with some fantastic no-bake, no-oven meals for a perfect Fourth of July celebration.
For the main course, these salmon burgers by The Barefoot Contessa (a.k.a., Goddess of the Kitchen) are to-die-for. The aioli with dill and basil brings the perfect blend of tart and earthiness.

The secret to fantastic Mexican street corn is…wait for it… mayonnaise. I know, I know. It’s hard to even stand the thought. But, it is BEYOND delish and you don’t have to tell a soul.
I happen to love this potato and pickle salad and get tons of compliments every time I make it. Plus, there’s nothing more American than pickles and potatoes.
This blueberry tomato caprese salad looks quite good and will help to complete the theme.
